Howdy from South Carolina! This will be my first Thanksgiving as a raw fooder. I am wanting to get together some recipe ideas that will replace the typical casseroles I am use to having on Thanksgiving. So far I plan on making Kristina's raw pumpkin pie and my corn salad. Any recipes would be greatly appreciated!

I second this request! It's easy to make a vegan thanksgiving meal, but raw and low fat is a little more tricky. Erika, I'd love to hear your pumpkin pie and corn salad recipes as well! My only idea so far is a spinach and fennel salad with a pomegranate orange dressing and pomegranate seeds, maybe sprinkled with a few grated macadamias. I want at least one more low fat raw dish and a raw dessert.

The pumkin pie recipe I got from Kristina Carillo Bucaram on her Youtube channel FullyRawKristina. It looks AMAZING! I can't wait to try it. My corn salad is really simple, sorry I don't have exact measurements because I don't really measure the veggies I just chop and toss together. Just put in what you have a taste for. But here are the ingredients:

Aprox. 3-4 corn cobs (cut the corn off of the cob)

1-2 Tomatoes (chopped)

1 green bell pepper (chopped)

1/2 cucumber (chopped)

1/4 - 1/2 onion or to taste (chopped)

Dressing: Blend following ingredients together in Vita Mix

1/2 cup raw apple cider vinegar

Handful pitted dates, pepper, Himalayan salt

I hope I'm not forgetting anything. This receipe is simple and you can make you're own variations easily.

Hi Erika!   This is a wonderfully yummy recipe I got from Jackie Graff

Sweet Potato Pudding With Pecan Topping

4-5 C. sweet potatoes

20 pitted medjool dates

1 vanilla bean

2 tsp. cinnamon

1tsp. sea salt

2 T. coconut butter

3 C. water

1T. Psyllium husks ( or more if needed)

Pecans

Honey

1. Place dates, vanilla, cinnamon, salt, coconut butter, & water in blender & blend until smooth. 

2. Add sweet potatoes & blend until VERY smooth. 

3. Add psyllium husks & blend again. 

4. Let sit for 5 minutes to thicken.

5. Blend again until smooth.

6. Place in bowl & top with chopped pecans sweetened with honey

This was originally a pie..but I left out the fatty crust & made it a pudding!

I still sometimes use it.

You can use maple syrup if you'd like, though it's not raw.

I avoid using agave..though that would be a raw option. 

This is the absolute BEST Sweet Potato Pudding EVER!!!

i made some really yummy cranberry sauce this year :)

2 bags of fresh cranberries (thought you can totally use frozen)

a pound or so of pitted dates

a cup or so of orange juice

orange zest

one lemon, juiced

ginger, cinnamon and nutmeg to taste

other berries to taste

apple chunks to taste

pulse it all in the food processor or blender :)

I love cranberry sauce and was actually thinking of how I could do a raw version of it. So thanks for the receipe!
